Rib & Loin Brainerd

I am dreadfully biased in my love of Rib and Loin, as it is the seminal BBQ establishment of my life. It is where I first sampled the glory of southern style shredded pork, and has been the measuring stick against which all other ‘Q is judged. This passed weekend, during my annual pilgrimage to the matriarchal birth place of the Jonny C line, we visited Rib and Loin.  As always, I was wowed. The meat has the perfect smokiness, not overpowering yet not subtle. Just succulent piggy goodness.  The sauce, which is the second true measure of a BBQ joint, is perfect, with the sweet being thick and sticky, hints of molasses and honey, the hot having a real pepper bite to it, and the vinegar based table sauce being just the perfect drenching. The staff is always friendly, and they have great skill at packing some travel pork and sauce for your trek back to wherever you live.
